Day 4: Dinner Bánh xèo

So met some friends over at KingCrossFit in Renton. We decided to go eat at #1Thai. I had this dish called Banh Xeo. It was the first time Ive had it.

Basically its coconut milk, eggs, sprouts, shrimp, thin slices of pork, pickled carrots, and fish sauce.

They cooked it pancake style thin and little krispy.

I did not know how to properly eat this, so i treated it like a salad. Oh well. Very filling and oh so good.

Give it a try if your tired of ordering Pho.

Day 4: Lunch Hotdog

So for lunch I had 2 hotdogs from Dante's Hotdogs. No bun but w. the fixings. I know some people are thinking why? Thats not clean eating.

Well its a choice. It was good and tasty and no one is perfect.

Day 4: Breakfast Scramble eggs w. bacon

So this morning I took the family to the airport so again i didn't have time to make BF. So i opted for Mcdonald's Yes McD's.

What order was:

2 orders of Scrambled eggs
&
2 orders of bacon. (this is basically 3 strips cut in half)

Nothing else I asked no salt on the eggs but apparently they don't cook the eggs w. salt thats why they give the salt packs when you order.

The bacon had ample amount of salt already.

This is what I mean. Choice's...make good ones even if its at fast food.

Just eggs and bacon > Regular Big Breakfast w. the hash browns and biscuit/ jelly

Enjoy

Day 3: Dinner Pork Larb and Coconut Milk Soup

Went to dinner at Bai Tong in South Center. No pictures of this but here are some of the ingredients oh BTW I had no rice w. any of these dishes or noodles:

Coconut Milk Soup.
Coconut milk
thin sliced chicken breast.
lemon grass

Day 3: Lunch Braised Beef, Mushroom, and Cauliflower

WHOLEFOODS is the place to go for a clean and delicious lunch.

Today I got the braised beef w/ mushrooms & cauliflower.

only ate half and satisfied. I can definately eat all of it but it would defeat the purpose of conscience eating. "Be listen to your brain signals telling you your full. Not your stomach."

Day 3: Breakfast Tuna fish.

So this morning woke up a little late. didnt have time to make BF. Soo instead of eating a BF sandwich at Jack I ate canned tuna in packed in water. Mixed in jalepeno flakes and was good to go. No mayo at all. Its a change, but edible if you like fish.

Tip: Canned tuna, salmon, sardines, chicken, and others is a good quick fix me up meal or snack. Be sure to read the labels. Be Clean. The ones w. EVOO is delish.

enjoy

Day 1 Dinner: Dry Moco Loco

So this is what I made for dinner last night. Its a Dry Moco Loco. For myself I ommited the Rice but for completeness I included it in for the picture.

Its dry because there is no gravy as you can see. But the juicyness from the ground sirloin and egg can make up for it.

Beef patties: (if you don't want to use beef your not limited to it, use any type of protein you want.)

4lbs Ground sirloin

3tbs dried onions

3tbs dried garlic

4tbs paprika

2 Sunny Side up eggs per patty.

1 scoop of rice. (optional)*

*Use cauliflower rice as a good substitute.

In a large bowl lightly mix meat, onions, garlic, and paprika together. Do not over mix, the more you handle the meat the more tough and dry it will get when you cook it. Next make rough patties. I use the palm of my hand and add 1/2 inch to gauge the diameter of the patty, for thickness use the thickness of your hand as well. But be rustic when creating your patties remember the less you handle the better and juicier your burgers will be.

Cook patties all the way through. On a hot grill. Remember good ground beef is like a steak some pink can be left (only steak type ground beef chuck, sirloin, shoulder)

Tip: as with all meats, Flip once and never press.

Once cooked to an internal temp of 140 degrees (medium) let rest on plate.

Now plate rice. Cook eggs and assemble.

Eggs can be scrambles, over easy, and medium if preferred.

Eat and enjoy!!

Cheddar

Day 1 Snack: 2 Nectarines

I was having a bad sugar craving. So I opted for some Nectarines. I bought them at Costco and suprisingly they were sweet and tart.

Washing tip: Feel fruit or skin edible fruit or veggies. You ever feel like a film or waxie texture on them? Well what that is, is "edible wax" how I take it off is by washing them like you would your hands, using soap. Once fully washed wipe down with a paper towel the feel and texture of the wax is gone.

Day 1 Lunch: Left over Steak and Veggies
