Day 1 Dinner: Dry Moco Loco



So this is what I made for dinner last night. Its a Dry Moco Loco. For myself I ommited the Rice but for completeness I included it in for the picture.


Its dry because there is no gravy as you can see. But the juicyness from the ground sirloin and egg can make up for it.






Beef patties: (if you don't want to use beef your not limited to it, use any type of protein you want.)

4lbs Ground sirloin

3tbs dried onions

3tbs dried garlic

4tbs paprika


2 Sunny Side up eggs per patty.


1 scoop of rice. (optional)*

*Use cauliflower rice as a good substitute.


In a large bowl lightly mix meat, onions, garlic, and paprika together. Do not over mix, the more you handle the meat the more tough and dry it will get when you cook it. Next make rough patties. I use the palm of my hand and add 1/2 inch to gauge the diameter of the patty, for thickness use the thickness of your hand as well. But be rustic when creating your patties remember the less you handle the better and juicier your burgers will be.


Cook patties all the way through. On a hot grill. Remember good ground beef is like a steak some pink can be left (only steak type ground beef chuck, sirloin, shoulder)


Tip: as with all meats, Flip once and never press.


Once cooked to an internal temp of 140 degrees (medium) let rest on plate.


Now plate rice. Cook eggs and assemble.


Eggs can be scrambles, over easy, and medium if preferred.
